Cannabutter Question

So I finished making some cannabutter around 3 am last night. I used the method of boiling water and butter to maintain an even temp, straining it into a container and letting the butter and water separate in the fridge over night. Well when I just checked on it at noon the next day the butter seemed to look solid but when I touched it, it all crumbled apart into the water!! I've done this method numerous times and have never had this happen before. Do you think it just maybe didn't have enough time to become completely solid? I moved it up to the freezer for a bit to try and let it settle back together but I just have never seen the butter crumble into a million little pieces mixing back up with the water again. Any ideas why this happened? I just used plain unsalted butter as always.

How thick was your layer of butter? If it's too thin it can crumble like you're describing.

everything turned out fine, I just froze it so I could scrape it off the bottom ice layer made some choc chip oatmeal cookies turned out super dank

I have never used water when making my cannabis butter. You say it helps even out the heat? I usually just heat the butter in a frying pan on LOW heat with stems/seeds/leaves for about 45 minutes stirring and smashing everything up about every 5-10 minutes. then I just strain out the material and let the butter set back up. I have never had an issue like that. glad it worked out

I use water to increase the volume of liquid because I make real small batches. 1 stick of butter requires a pretty small pan so the water evens it out (since sometimes not even all my plant material is covered).
Although, I use a slow cooker.
Just sayin'.
