Someone here mentioned its optimal to have 1 gallon of rootspace per foot of verticle height. I'm not sure how accurate that is (and that just might be a suggestion for BEST results, ya know?)...
So, in that case, I'd say between 4 and 6 feet...but of course there are any number of factors that can change that.

By 6 ft they should be nice and root bound in a 5 gallon bucket.

eh, wouldn't say they would be rootbound. They might be reaching the point of being cramped for space, but definitely not rootbound. If you can flower a 1.5-2 ft plant in a solo cup with little to no problems, a 6 ft plant in a 5 gallon container shouldn't pose much of a problem. I don't know if I would recommend growing a 6 foot plant, something that massive is going to require a fuck ton of light and even with that you're going to lose most of it in the first few feet of the plant. Grown indoors you would have a fuck ton of fluffy, airy, buds. If you want to grow something that big you would be much better off doing it outside, if not I hope you have a lot of room and some strong lamps to take care of it.
Just an FYI the rule of thumb for container size is one gallon for every foot you wish your plants to end up at. IE you want 3 foot plants a 3 gallon container would be more than enough.

Maybe I misundertand the concept of rootbound then. Is it crippling to the plant, or just when the plant completely fills the rootspace to the point of no more growth?

I would like to say that I think that rule of thumb is a bit flawed. My plants I grow in hempy buckets are only about 3 feet tall and when I pull the rootball out of the pot the perlite is formed into a ROCK due to all the roots. a 4 foot tall plant in a 5 gallon bucket will do fine, but it would certainly yield more if it had say 10 gallons.

Goto growkind.com. marijuana pictures. September or august 2006 its called monster outdoor grow. Look at the picture labeled christmas tree oh christmas tree. That plant was over 12ft tall and grown in a 5 gallon bucket that was buried. There is a 5 footer next to it. I had too bury it cuz the roots completely pushed all soil out of the bucket. Yielded over 4lbs in late september early august. I repeatedly grow 8-9 footers in 5 gallon buckets. Look at the other pics as well. All but the clones were in 5 gallon pales. Gl

Even if the plant is a little rootbound as long as you supply what it needs you would be surprised what you can do with a small space.

My bagseed from last year ended up at 5'. I think she could have been considerably bigger if i had transplanted from her 5 gal bucket a few weeks earlier.
