i'm thinking this is a good idea.

guessing that it will be LOADED with nitrates so I will leave it out to compost &
eventually add slowly to avoid burn/death

should i mix this in with the soil first or feed once i get to a suitable size?

organic solutions for phosphorous and potassium?

Chicken manure is pretty hot when it fresh, definitely compost it. I've read somewhere that most chicken manure has a N-P-K of about 1-0.8-0.5.

I would recommend bat guano as a source of P and Potash for K.

Wouldn't guano essentially replace chicken shit?  I don't want TOO many nitrates.  Phosphorous seems to be most important, no?

Different brands have different sources and ratio's of NPK.

For Example:

Peace of Mind

Jamacian

But you can see that it is primarily P, and this guano too is fairly hot, but less so than the fresh manure.

recommendations for a pH meter?  is digital>litmus paper?  or is old school BEST SCHOOL

Digital is easiest for testing your water's pH and the PH of the run off. The paper is convenient to use if you want to test the soil itself.

I just like the digital meters for their accuracy. The strips can be used as a reliable stand-by to check and see if all is well.

soil is really all i will be testing

water comes from creek full of biodiversity so I know its good.

Book I have says wet chicken manure N - 1.5%, P - 1.5%, K - 0.5%; and dry N - 4%, P - 4%, K - 1.5%, +trace elements.

Even more nitrogen if there are feathers in the mix.
