Superbowl Chili

Fuck yah, once a year I break out this chili recipe for the superbowl. It's simmering on the stove right now and wont be done for at least three more hours. I feel bad for my co-workers who have to use the bathroom after me tomorrow

Dude, my girlfriend is throwing down some chili in the slow-cooker as we speak. I'm doing nachos and my buddy is doing chicken wings. You should take some pics, I fucking love chili!

1 Hr 10 Min into cook time
INGREDIENTS: 1 pound ground meat loaf mix (beef, pork & veal) OR 1/2 pound ground beef and 1/2 pound ground pork 1 pound beef stew cubes (round) cut into 1/2 inch pieces 4 slices of bacon, cut into 1/2 inch pieces 2 medium onions, coarsely chopped 2 cloves garlic, finely chopped 1 4 ounce can of diced greed chiles 1 4-ounce can of diced jalapenos (or cut up sliced jalapenos 2 tablespoons chili powder 1 tablespoon ancho or chipotle or hot red chili powder 1 teaspoon dried oregano 1-1/2 teaspoons ground cumin 1-1/2 teaspoons salt 1/4 teaspoon cayenne or crushed red pepper 2 6-ounce cans tomato paste 1 12-ounce bottle of beer 12 ounces of water 1 15-ounce can pinto beans, rinsed and drained DIRECTIONS: 1. Fry bacon in large heavy pot over medium-high heat. When bacon is crisp, remove pieces with a slotted spoon, drain on paper towels and set aside. 2. Add onions and garlic to the hot bacon fat and cook (stirring occasionally) until onions are translucent. 3. Add the meat to the pot and stir until the ground meat is broken up. Cook, stirring every few minutes, until the meat is evenly browned. 4. Stir in the remaining ingredients except the beans and the bacon. Mix thoroughly and bring to a boil. Then lower the heat to medium low and simmer uncovered for 2 hours. Stir occasionally. If chili is bubbling too fast, lower heat a bit. If chili gets too thick, add a little bit of water and stir it in. 5. After 1 hour, taste and adjust seasonings. Add extra seasonings gradually and stir in thoroughly. 6. After 2 hours, taste and adjust seasonings again. Stir in the bacon and beans and simmer for 1/2 hour longer. Serve over rice or cornbread. Add sour cream and/or shredded cheese to taste. Basic recipe serves four. Double the ingredients to double the servings.
I modified it just a tad this year though, my girlfriend didn't really like the cubed beef last year. So we went out, bought some beer brats, sliced the casings open, and mixed that in with the pound of ground beef. We were just going to use ground pork but they didn't have a small enough package. I always substitute 6 oz of beer for 6 oz of water as well so i use 18 oz of beer and 6 oz of water.

Sounds just like my chili! Except I dont add beer (cuz I'm not 21) and I put some BBQ sauce in it. And Franks hot sauce.

Forgot to say that's just the base recipe. Since I have all the spices I usually reduce the quantity and add all of them. It's really easy to work with and alter and that's why I like it so much.

Oh yah, gotta have the bacon. I end up buying the real fatty pack to so there's more bacon grease in the bottom of the pan. Shit smells so good when you're cooking the onions and the garlic.
