I just thought maybe the coir might keep the perlite from wicking water upwards as well as it would on it's own. And also slow down fresh air being pulled into the medium when watering. If I decide to go with a combination do you think I should mix the two or keep a layer of perlite on bottom and coir on top?

That was my experience exactly. I've used verm and coir in the past, and really haven't seen a noticeable difference in my crops since going straight perlite.
