Ok, so i got some seeds from some decent bud i got a hold of, nothing fancy since i cant use a credit card for irrelevant reasons.
im growing them outdoors, but in pots, ive read ill probably have to transfer to 5 gallon buckets.
i think i know what im doing, but i dont wanna let my ego ruin this grow. theres only really shitty bud where im at and i need something good hahaha could anyone help me?
also im using mashed up bananas as fertilizer to help with potassium and also orange peels since i have 2 orange trees

Can you not hit a garden centre for proper soil?
You'll need a better fertilizer source. Banana and orange peels alone will not be sufficient enough to carry the plant through its whole life cycle unless your soil is crazy rich.
A 5 gallon bucket is a fine pot! Just be sure to drill drainage in the bottom. Green buckets are my preference. Black buckets get too hot from the sun and can damage roots. White buckets let too much light through and will damage roots.

ive already got them germinated planted and one is about half a foot tall. i heard im supposed to start lst since very young. but how young??
Also, i had them on my roof for good sunlight, messed up my foot and i couldn't go up there for about 5 days, i think their growth may be stunned from lack of water, they soil was pretty dry.. do you think theyll come back? one has a leave turning yellow

I start LST if that's what I'm doing as soon as you see the 1st set of true leaves. Or if I also topping the terminal node I wait to start LST until after the new leaders have grown an inch each.
You should have started a while ago if you're already at a foot tall but it's not too late to start.
The roof first of all seems like a blatantly obvious spot to grow, do you not have to worry about air patrol? They are certainly going to dry up quick if they are sitting on shingles, the black colour will radiate a lot of extra heat onto your plants. You're definitely going to see some damage after 5 days on a roof with no water, they probably won't die but i would get up there with some water ASAP.

i had heard that was good, but that it was better to mix my pee with water first then quickly water them with it. has anyone ever had any experience with that?

Honestly bro if you can't afford to feed your plants why did you start them? You wouldn't buy a dog or a hamster if you couldn't feed it right? Skip buying your next bag of grass and get some fertilizer!

Definitely start saving all of your organic waste products to create compost. It can be as easy as throwing all your excess vegetable/plant trimmings and egg shells into a pile, water it every once in a while (if it doesn't get some rain naturally) and mix it up every couple of weeks. I would also suggest cutting up your citrus peels first, as they can take significantly longer to decompose if you leave them whole. Diluting urine to use as a fertilizer can also help, but definitely make sure you don't just piss directly on or around the plant.

I used to grow in the 90s with no nutrient mixes or anything but composted organic trash manure fruit peels eggshells fish parts oyster shell etc my base soil was either red dirt and coco coir or graveyard dirt if you dont have your compost made by now it is too late for optimal nutrients for the plants so your "experiment" was askew before you planted your seeds your mulch needs to be ready to use by the 2nd or 3rd week of growth and i like my mulch a minimum of 90 days I used to make 2 soil mixes one sort of a veg mix then put them in the ground after the show sex with the 2nd flowering batch mixed in the turned soil if efficient organic farming is what your experimenting with there is a lot of pre planning to be done...
as for right now they will need food especially if dirt is hard to come by if your not gonna pay for it i would toss all of my food trash mix it up with dirt and hope for the best that is not a supplement for nutes by any means just the besst chance for survival stay away from fresh leaves grass and wood based trash microorganisms will rob your soil of nitrogen while they are breaking those down... its hard to advise without pics or knowing what your area has to offer
