You prob don't need to water everyday, unless its really hot. It looks really wet right now, which is fine if you just watered it.
Just check the soil, it should dry out a bit (look and feel dry) in between watering, but the plant shouldn't get wilty.
When you do water it water it well, there should be a little run off on the bottom.
You can barrier it a little deeper if you want.
I think it looks pretty healthy.

You could add another half inch of soil to steady it.
Cool. Is it a bag seed, seed? I got some really great plants from bag seed.
It doesn't have to be enclosed.
