Not too sure about the nutrients but I was leaving out my tap water for 48hours before use and the PH was messed up when I eventually used it

Yes you can use it. Think of all the hydro reservoirs that have nutrient solution for weeks at a time.

I would not use it after too long. I left some nutes in a jug for about a week and when I opened it, there was a foul smell. So I decided not to use it, just as a precaution.

What nutrients were you using?
I use GH Flora and find no problem leaving mixed nutrients out. I keep one gallon jugs for seedlings and vegging plants and then i have a 30 gal res under my ebb and flow and both have nutrients and water in them constantly and they do fine.

Well yeah it'll stagnate after a while if it's not being airated.

I asked this, and was told "only mix up what you plan on using". So, I mix half gallon jugs now.
I had the same trouble as you. When I mix later on, I do gallon jugs and just let them chill. The only time I had a problem was when the weather was 90+ degrees and I left the jug sitting in the sun with the cap on. 
If its cool water, it should be ok for a week or so IME.

A few days will be fine. You can refrigerate it to discourage anything nasty from growing in it.
I'd also recommend shaking it well from time to time to help aerate it and just keep it from settling. Once or twice a day would be plenty.
Your nose should be a good measure of whether the nutes are still good. If they smell the same as when you mixed them, fine. If they smell different, pitch them.
Of course none of this applies if you're using microbials... those you'll want to make sure you use immediately.
