OK start by carving a hole in the coconut the size of your bamboo be sure to wax coat the inside of the bamboo. Cut hole for the stem and bowl and you can use wax to seal any air leaks you may have as well.

Look man as I said earlier use wax to seal the pipe or bong as well as coat the inside well with wax as well.
As to the bowl and stem; line the bowl with aluminum foil and the water line part of the stem coat with wax, no need to do anything between the bowl and water line part of the stem as that the water will filter out the drying bamboo fiber.
As for making the holes instead of drilling it you could just use a carving knife and taking your time. Being sure not to cut yourself or cracking the coconut and/or bamboo.
The waxing inside is important because you don't want to be inhaling bamboo or coconut fiber trust me it is not good for you.
Making your own piece is a great joy when it's finished.

I can't remember what it was I was using other than wax.
We learned the hard way when a friend had to go to the doctor that inhaling the dry fibers cause him some lung damage.
The parts that are waxed never get hot so it justseals the inside so there is no worry of fibers you know. Plus if you take your time it makes it easy to clean as well.
I'm sure there are other choices of seals that's just what we used it because it was easy to get. As well as work with and forgiving when sealing oops"s.
