Just as the title says, what is the best method to store pollen for years with high viability %.

ive heard freezing or even just in the fridge will keep it for years

double air tight containers, vacuum sealed if possible, into the freezer it goes.
I can find out how long it lasts but I'd assume it's near indefinately like seeds.

I wouldn't say that. Seeds are protected in vaccume sealed and stored in bags or glass tubes and frozen. They'll keep decades like this if harvested and stored(like I said above) correctly. I haven't done enough research on pollen to be sure.
