I have a dehumidifier for making jerky and whatnot, think it would be alright to dry my buds in there?

It would work but I dont think it would result in as positive a taste and potency as standard cutting and hanging procedures. if I were you I would put a few buds in there if you want some now and hang the rest out to dry

Just another way of trying to fast dry. Just set aside some of the lseser buds for sacrifice and then dry out the nice ones the right way and then cure them in jars.
Properly dried/cured buds burn, taste, and smell so much better. It's worth it.

What they said...
I have tried using my dehydrator to dry bud and while it does work, it doesn't allow the chlorophyll to break down so it tastes very harsh.

Exactly. Just another method of fast drying. If you are itching to smoke some, I'd reccomend setting aside some of the smaller buds and putting them on a paper towel and leave it on your cable box over night. It'll be dry by morning.

is it effecting the potency at all?
I put 90% of it in mason jars....i heard letting it dry in sealed mason jars leaving it open 1/2 hour a day to evaporate... makes it taste/smell amazing....agreed?

Yes drying and curing buds properly effects potency. Read this guide on curing and drying it's pretty good. It should tell you all you need to know, I have used it myself.

What you're describing is curing. You did let the buds dry out for about a week before putting them in the jars, right? Curing occurs after drying. If you didn't let it properly dry before starting to cure it in the jars, then you're quite possibly going to end up with moldy buds.

Well, it would definitely be better than having the lid on, but I think the most common thing to do is hang the buds, so that they are completely surrounded by air, in a darker, dry place. It usually takes about a week, but the real way to tell is to snap the main stem, somewhere in the middle of the bud. If it doesn't have a clear snap, then it isn't ready for the jars yet.
Curing is more of a process to allow for the breakdown of chlorophyll, from what I remember, which makes the smoke harsher, although curing, especially for the first month or two, also is to aid in lessening the moisture content in the buds.
You really don't want to try to hurry, rush, or simply skip parts of at least the drying process, because you do not want to run the risk of having your buds go moldy. It is a potential health concern, not to mention that you'll lose your crop. I'd suggest reading that link that was posted above to fully understand what you need to do.

Also, I just noticed this in your first post - you have a dehydrator for jerky and whatnot, not a dehumidifier.
