Does something like this exist? I would think so, but I'm having trouble finding it or even simplifying into terms that would yield the results I'm looking for.
Anyone mind pointing me in the right direction?

A Tempstat is what your looking for. Some are switchable to control a heating device or a cooling device. Some have thermometer probes on them, some have day and night temperatures, some have variable speed control for your fans based on temperature, some have an adjustable tolerance to allow for larger or smaller changes in temperature.
There's a lot to look out for and I hope you find the right one. If your using it for your exhaust fan I suggest temp/humidity controller otherwise your facing powder mildew problems when the humidity spikes at night. An Environment Controller is what I use (EVC1 by sentinel but they have newer better options now)
