smoking tri tip

So I'm gonna be smoking some tri tip in a few days and i was just gonna follow this recipe http://www.food.com/recipe/tys-3-day-smoked-tri-tip-197366 but if anyone has a better one feel free to post it.

Hmmm I'm not sure smoking is really the best way to go when it comes to tri-tip considering the sear is the most important part. The photos on that website don't look that great to me because they don't have that sexy crust on the outside. Also, marinating for 3 days seems like a terrible idea. I bet it fucks with the texture of the meat. Honestly I can't remember the last time I even thought about using marinade for a tri-tip, I usually just do seasoning.
Not like I'm a grill-master though, let us know how it goes.

I agree with the some of the things Myco is saying here, except for the smoking part. You can smoke my dick, and I'd eat it. Try a reverse sear. Smoke until just below your desired meat temp, then transfer to grill for a finishing sear. As far as the marinating 3 days is a bit a fucking overkill for some BBQ. But, like the article says, you have to try it at least once. What I'd do is marinate it in soy, some garlic, lemon, a bit of salt, black pepper and some oil for at most 6 hours.
And keep the fucking fat on it, ya dingus!

Definitely, I have seen recipes call for trimming it off, straight silliness.
And yea, a reverse sear is a good idea.

Idk anything about your fancy meats but we do a pork shoulder pretty much every other weekend and that fucker takes like 12 hours every time. I'll have to check this out because a few hours is way more approachable. I always do a dry rub but it sounds like you don't want that with this cut.

I read into it a bit after reading this thread, seems we don't really have much of that cut up here in the north east. Or at least we didn't a few years ago when all these forum posts I found are dated.
I'd like to try some beef on the smoker, but all I know is pork ribs and shoulders. I did chicken wings that came out OK once too, I did the reverse sear thing you guys are mentioning, but they only sat on the smoker for about 45 minutes. Never really got the chance to get the smokey flavors.
But yeah, I'd like to try a cut of beef, I just don't think I can find this one and not sure what else to do.

What temp was it smoking at? If it's low enough oit should come out pink no matter what.

Tbh I don't know. These brinkmann have a bunk gauge that just read a warm,ideal,and hot.

Yeah those thermometers are shit. I have a barrel type smoker it came with the same shitty gauge. "Ideal" ideal for what? So stupid.
Super easy to just replace it, or get an infrared/laser thermometer to monitor it.

Yeah I totally agree. I was borrowing it from my uncle. I mentioned he should get a aftermarket thermometer to replace that shit one.

I have the same bullshit on my smoker. I can't find one that'll fit inside the slot. I bought an oven thermometer and just popped it inside, it fucking broke the first time I used it lol.
What I have now is a thing like this -

I wish to all fuck I had gotten that one. I bought one for $15 at Walmart that only has one probe. It works perfectly and it was worth every penny, but that dual probe one allows you to just stick it through a piece of wood or something and monitor the actual temp inside the smoker too. Or two pieces of meat, which is dumb unless you're doing 2 different types at the same time.
