Makin' mead.

So I've been playing Skyrim and had an overwhelming need to have some mead. Its calling to my fucking inner viking and shit.
Luckily, the hydro store I go to is also a homebrew store, so I was able to make this recipe on very short notice:

1 Gallon Water 3 lbs Honey (1 quart) 1 Lemon 12 Cloves 1 cup strong tea Epernay II yeast
Add the honey to one gallon of boiling water. Turn off the heat and stir well. Slice or juice the lemons and add along with the clove and tea. Let stand covered until cool. Pour into a gallon jug and add the yeast. Epernay II yeast works very well, but champagne yeast or ale yeast are also fine.
Let it ferment for 18 days, and then siphon into bottles. Seal or cap the bottles and let sit at room temperature for two weeks, then put in the refrigerator. You can drink it at any. time now.
We started it yesterday, its bubbling away nicely today.
Will re-update as it progresses. I've been meaning to do this for quite some time, and I'm super excited that I finally got to try it out. I also have a big packet of mead specific yeast, but its for 5 gallons...and 5 gallons requires 15 pounds of honey, which is damn near $50 worth...so thats on the back burner until we figure out if this is good or not.

Mead is interesting. I've been homebrewing for awhile now and I've always been curious about making some mead, but I hear most recipes are going to need a couple months to really mature. Can't wait to hear how this turns out.

Yeah, I decided to give this one a go just for the fuck of it. Relatively cheap...and I guess if worst comes to worst, I'll just drink it real fast for the buzz but I think it should taste good, so I'm not too worried about it.
The official "sweet mead yeast" I have is one that takes months and months to mature, something I'm sure I'll do and forget about I guess the dry meads can take years to finish correctly, but most people aren't down with dry meads.
If its real good, I'll give each of my friends a liter for Christmas haha.

Bottled up that gallon today, its been 18 days. IDK why the fuck I said "yesterday" in the OP, I totally wrote down the day on my calendar and its been 18 days I blame the
Anyway, it stopped fermenting about 2 days ago, and I bottled it today (as per the instructions of my recipe). Its not very clear at all, so I'm just gonna let it sit on the shelf for a while. I'll just re-rack it once it clears up.
Next time I'll have a pound of this "sparkolloid" stuff (just got it on ebay) and it'll clear right up.

Did you judge the end of primary fermentation by lack of airlock activity, or a hydrometer reading?

Since this is my first real experiment with brewing something besides prison wine, I didn't go all out. This is completely a test, and if it tastes any good at all when its done, I'm gonna start getting more into the hobby

The mead I've had is nasty Robitussin tasting stuff, but I've only had one variety ever. Hope yours turns out better than mine was.

Hydrometers are an awesome investment, and only like $3. If you take your initial specific gravity reading you can do some very simple math with your final gravity reading to get a %ABV for your mead which is helpful, and then you can also use your hydrometer to know for sure if primary fermentation is done when the specific gravity stays constant for 3 days straight. That said, I would guess you're fine on this run
Also, if you're interested, there's a 6 gallon glass carboy on Amazon for only $30 plus free shipping. Seriously the best deal I've ever seen. Probably better for making beer though, I feel like 5 gallons of mead would be a little bit too intense for me

Ah shit, I'd totally be on that if my aunt hadn't already bought me a gift certificate to the hydro/homebrew combo store (best place in the WORLD haha). I specifically asked for that so I could buy a carboy and pass on the shipping
And shit, I didn't know hydrometers were so cheap, I'll have to pick one up. I can tell what I have now is definitely alcoholic, it sure would be nice to know an ABV though.

No reason not to have two carboys! I have three right now so I can have beers at various stages of fermentations. I have a lager going that takes a couple months to mature but an IPA that's best fresh (less than 3 weeks) so this way I can let the lager mature while the IPA and a holiday beer brew out.

What's the initial investment look like to get started homebrewing? I've been thinking about it for a while, but I haven't gotten around to doing any research.

Ive been looking around and have come to the conclusion that your looking at no less than $200 to have a pretty decent setup, i could have been looking at over priced sites though i have no idea
but I would love for us to have an active brewing thread, ive wanted to start up for a while

i've done some research for wine making and the main investment is the carboy and bottles it has seemed to me. Harry do you go to any brewing based forums? inb4 'the brewery' or any specific supply site you go to? I've basically only smoked thre or four j's in the last 2 months so i'm thinking about setting up a brewing operation. If it wasn't for my dads hospital i'd of probably finished my minibox, but now i don't have much cash to start it up because of all these damn bills. :/ i hate this whole 'being grown up and living in my own house' thing.

damn just read the first post where he said 5 gallons required 15 lbs of honey
holy fuck dude, so if you drink all that over a week or two you will have ingested 15 entire pounds of honey..
