 How do plants "Look Thirsty"

Hi everyone.
After reading a lot of grow journals, I have read posts where some plants "look thirsty"
Being an absolute nube to gardening, I have no idea what this constitutes of.
Can someone please clarify what a thirsty plant looks like?
I always went by the condition of the soil its been planted in, but I think there may be more to it than just that.

They get droopy and wilty.
I've had a plant with all the leafs down looking like it was dead. 2 hours after watering they perked right back up.

On that note i want to point out that is also what an over watered plant looks like.
so pick up the container and or use some common sense
