I've been reading other peoples grows and lots of posts on ebbnflow tables. But ive never seen how often you change the res? Do i change it or just top it off?

Some people top it off with pH'd water to keep the water level up as it evaporates and plants utilize it. Then change the reservoir out every 7-10days.
I recently read over some information on ICMAG and there's people who top up with nutrient solution to maintain the right EC. One of the users of this used PureBlendPro 15ml gal and Calmag 5ml gal and would top up the reservoir and get fantastic yields.
I think if I did this I'd want to use coco as the medium as it's high cation exchange capacity makes the medium very tolerant to excessive cations such as Ca, Mg, and K. This is because the medium will hold large amounts of these cations and release them for plant uptake.
I've been studying a bunch lately about coco and trying to develop or adopt the most adequate (in theory) feeding. I am very curious about how the cation exchange capacity and the natural nutrient content of coco will effect a plants requirements.
With ebbnflo using the tradition expanded clays you would want your nutrient solution to include exactly what the plant needs because the medium doesn't have any cation exchange capcity, the same for rockwool, and mediumless ebbnflo.
