If you want to make water hash, you're going to need some bubble bags, or at least some fine cloth to separate the the plant matter from the trichomes.

the butter. Water doesn't work too well as a butter replacement, plus it doesn't contain any active chemcials so it wouldn't work to well in that department either.

dude just take your trim and soak it in some everclear or rubbing alc for a few seconds (so that just the crystals dissolve and not the leaves themselves). Then dry off all the alc and water and you have hash.

You've got two broad options.
Physically removing the trichomes and leaving them intact which IMO is true hash. Either dry sifting which can be done over a printing screen/silk screen or water extraction which is essentially the same thing but using water to suspend the trichomes which get filtered through a series of screens resulting in different grades of hash. This can be simplified to using a thicker strainer to just remove the leaf material once the trichomes are suspended in the water resulting in a crude grade of water hash.

Using a solvent to dissolve the trichome containing the THC and other cannabinoids and then evaporating the solvent to produce hash-oil. The solvent can be any sort of organic solvent ranging from chloroform, alcohol, hexane, butane, etc.
Any are relatively easy but physical extraction is much more safe for a novice. Getting a printing screen from ebay or something would probably be a good idea or using the crude water extration if you don't want to invest in bubblebags.
