Well not necessarily, but you may have to manually click to request the higher res version. People (including myself) have been fed up with the poor resolution of You Tube videos, and finally it looks like Google is answering these cries by offering dual format (higher and lower res) for the newer uploads. Notice the relatively obscure link below the video window:

From that last link, I'm going to add a &fmt=18 to the end of my you tube videos above, so that they'll hopefully load the higher res version by default!
Edit: Well the appended URL trick didn't seem to make the embedded videos higher quality, unfortunately. But if you go to the actual You Tube page for the video you can select to view it in high quality.
