I live in north east central florida. Temps in the day range from 65-80. night temps haven't dropped below forty yet. probably won't until February.

yeah id say early winter is pretty late to want to start growing, wait a season or two

I would start germination in the last week of winter (but im not from USA). Then it gives the plants 6 months of increasing light hours as the days generally get longer through Spring and Summer - They love that.
