I wouldn't venture too far above 1200 unless you're sure your plants are heavy feeders. From the looks of it I'd say your plants are ready to be fed per the "heavy feeding" instructions on your bottle(s).
you're fine with the pictures. To make them safer just don't share them with the public (there's an option for letting anyone view your photo journal).
As for chopping roots, it is definitely a method of last resort. While it can have its benefits it is also an extremely dangerous practice. Chop too much, or cause too much stress, and you'll kill your plant.
That being said I've seen a lot of people take root bound plants, hack off a bunch of roots, and repot them in new soil with no problems. It's all in how you do it and how much you take off.
